W hen people say the word, curry, many different images appear depending on the people. In Great Britain, it essentially just signifies a meal, Indian, of course, but just a meal as an ordinary part of the day. In many parts of the U.S., curry means two things: foreign and spicy hot. To Indians in India and the aforementioned countries, it just means whatever sauce is being used for a particular dish.

The Big 5

So, again, where do you start? There are five that are known worldwide. They are each uniqie and combined they sustain your search for wonderful and exotic flavors for quite some time, especially as you experiment to perfect your own versions of thee classics.

And they are:
Tikka Masala
This is the most popular and best known of all curries and , with chicke, is served in virtually every Indian Restaurant the world over. Marinated in spices, bakedand sauced with tomatoes, and cream that smothers it, it is mellow, satifying and delious.

Saag
Spinach is the key, along with ghee or butter, herbs and spices, it is cooked with chicken, shrimp, potatoes to make a fragrant and flavorful meal.

Korma
Korma is adored for the depth of flavor achieved in a very mild curry. Korma uses clove, cardamom and cinnamon for the flavoring, nuts, butter and cream to mellow, garlic and ginger for tang and a slow cook to infuse the meat (chicken or lamb) with the richness this curry is famous for.

Jalfrezi
Jalfrezi is a stir-fried, meat or fish curry with some pop, owing to the presence of green chiles, tomatoes, onions, and coriander. The chilies add the heat, so use those that suit your taste. The method allows for the vegetables to retain a crunch and for the spices to penetrate

Vindaloo
Vindaloo is a fiery, tangy curry that is not, and should not be for the faint of heart. Originally created in the Portuguese colony of Goa and originally made with pork, vindaloo is about chili peppers and vinegar. Yes, it has garlic and ginger. Yes it might have other spices. It doesn't matter. They are soft notes to accompany the heat and the tang. If you are looking for a dish that awakens your taste buds and your very pores, this is it.

Basic recipes are offered by clicking on each dish, but the fun is creating these classics in your own culinary style. I have love learning techniques and combinations of flavors over the years and I hardly every make the same dish twice, meaning that i'm always trying to make it better. I hope you will too..

All of these dishes can be made with whatever protein or vegetable appeals to you. Some have been associated with a particular version like chicken tikka masala, but the curries themselves can esily be adapted to accomodate your preference. In fact, many Indian restaurants just list the curry title and then have the customer choose the main ingredient. Make your dish and serve it as if it was always so.
